Spontaneous fermentation with indigenous yeasts, long maceration on the skins, traditional aging in large oak barrels for 4-5 years, and subsequent bottle maturation to harmonize. Elegant and complex on the nose, with notes of cherries in alcohol, dried roses, licorice, and sweet spices, accompanied by balsamic and earthy nuances. On the palate, it is structured and austere, with present yet refined tannins and a vibrant acidity that lends freshness. The finish is long and persistent, with a pleasant minerality.
