The Cuvée Nature is the entry point in Nicola Gatta's sparkling wine collection and reflects a philosophy of minimal intervention, using only spontaneous fermentation with indigenous yeasts and no added sulfites or fining agents. Flavor Notes: the wine has notes of crisp green apple, lemon zest, white flowers, honey, ripe white fruit, and mineral hints. It is noted for its high acidity, fine bubbles, and a taut, saline finish. The use of wood maturation for some of the blend helps balance the acidity and adds a slightly richer taste
