The 2019 La Côte aux Enfants is vinified using traditional Burgundian methods, with one-third of the grapes vinified as whole bunches. A slow and progressive cold maceration precedes fermentation, followed by aging in small oak barrels, giving the wine complexity and aromatic depth. This red wine is made exclusively from Pinot Noir, the emblematic grape variety that finds a rare expression of intensity in this Aÿ terroir. Color This Coteaux Champenois rouge reveals a magnificent garnet color that reflects its rich concentration. The bouquet displays remarkable intensity with dark fruit aromas reminiscent of black cherries and blackberries. These fruity notes are accompanied by hints of licorice and delicate spices reminiscent of vanilla. The attack reveals nuances of violet and bergamot that harmoniously complement the flavors of candied dark fruits. The wine then evolves towards more complex notes of pepper, truffle, and undergrowth. The structure is full-bodied with exceptionally soft tannins.
