From the selection of individual vineyards particularly suited to exposure, soil and climate conditions, and the age of the vines, this Riserva is born, a wine that highlights the finesse and elegance of the "Ceuvinasca" grape. Spontaneous fermentation and subsequent maceration are prolonged over a longer period. Bottle aging lasts over a year. The cultivated variety is Nebbiolo, locally known as "Ceuvinasca." The vineyards are primarily composed of vines over 50 years old. A small percentage of 5% of the native Rossola and Pignola varieties complete the blend. Yields per hectare are approximately 60 quintals. Harvest generally occurs in the third ten days of October, and the hand-picked grapes are placed in 20-kg baskets and brought intact to the cellar. This is followed by soft pressing and spontaneous fermentation for approximately twenty days with native yeasts. The wine is aged in large, untoasted oak barrels for over a year. It is then aged for at least six months in the bottle.
